Chewy Coconut Oatmeal Drops

Directions

1. Heat oven to 350°F.

2. Beat butter, granulated sugar and brown sugar in large bowl on medium speed of mixer until well blended. Beat in eggs and vanilla.

3. Stir together flour, baking soda and salt; add to butter mixture, beating until blended. Stir in coconut and oats (batter will be thick). Drop by teaspoons onto ungreased cookie sheet.

4. Bake 8 to 10 minutes or until edges are lightly browned. Cool slightly; remove from cookie sheet to wire rack. Cool completely. Makes about 5 dozen cookies.

Mounds are now so hard to find in Boston, MA, USA, this is the best solution. Wish it did not have (HIGH FRUCTOSE Corn syrup) in it the British made one's are made with regular sugar. Hope they USA made ones go back to sugar, soon. Yes a lot of people willing to pay more for that.

I've ordered this once before and been extremely pleased with the quality of the candy. In fact, the Mounds bars arrived encased in ice to make sure they arrived without melting! However, on the ones I received a few weeks ago from Global Wholesalers, the chocolate was light gray and the bars were much less tasty because they were only one month from their expiration date.
