Answer: The one I bought (70% cacao, organic) was made in Poland, so chances are the soy is not GMO, but who knows... Europe protects its own citizens, but they can export anything to the US; just like our Big Food reformulates everything in Europe, but keeps poisoning us.

Answer: It is one solid bar but is made to easily break into smaller pieces made up of 10 rows and 3 pieces each row or up to 30 pieces if you so choose to break along the lines in the chocolate they provide. I typically break off a row of 3 at a time.
Answer: If you are thinking of the 1/2 x 3/4 inch squares - and the bar is 1/4" thick. It is NOT easy to snap-break. I smack my bar on the countertop to break it because it is very hard. It is not like the Lindts bars. But it is for that reason that I love these bars. I know you can snap them apart, but it is difficult to do. I eat a couple of little chunks each day - antioxidant reasons. I also let it melt a bit in my mouth. My brother uses 90% Lindts, but I prefer this one. Hope I have helped you. PS, this is the second time ordering from Amazon - cheaper.
Answer: Yes, the bar is divided into 30 small rectangles. I find it easier to break into small pieces than, say, the Lindt bars. Easier to break into two or three rectangles at a time than one, but the rectangles are small and I cannot imagine wanting to eat just one.

I was looking for a substitute for regular chocolate as I suffer from GERD and IC and this will do. I wasn't a fan of white chocolate until I tried this! Awesome, highly recommended! I always said I hated white "chocolate" until I tried this. I guess I never really had true white chocolate before. This stuff is sweet, creamy and delicious! You have to really want something sweet though. It doesn't satisfy my craving for chocolate, but when dark chocolate just wont due (because I'm wanting something much sweeter) I like to nibble on both this white chocolate & intense dark chocolate creating a enjoyable snack! The best of both worlds.
My one complaint is the non organic soy lecithin. They don't say it's GMO free and soy lecithin is available in it's organic form (it didn't used to be) so there is no excuse not to make the switch. Finding non-organic ingredients in certified organic foods is a big peeve of mine.
Aside from that, yum yum all the way. If you've only had the cheap versions of white chocolate you don't know what your missing!

This review is for Green and Blank's Organic Vanilla Bar. The chocolate is very mild in flavor. I enjoy the fact that it is subtle and not too strong. Most importantly, the chocolate is made with quality ingredients. Reading the label makes me feel more confident in what I put in my body. The chocolate is less sweet than perhaps the more mainstream brands. It is a preference thing. I would say if you prefer to eat "pure chocolate" and like the natural, subtle flavor you will like this. If you prefer more sweet brands, you may be better off with Hershey's

Many things that people think of as "white chocolate" are actually confectionery coating---they have no cocoa butter in them at all. Even real white chocolate often has a chalky taste depending on the quality of the other ingredients. Green & Black's White Chocolate with Vanilla is the one type of white chocolate I've tried that never, ever has that chalky taste. It's unbelievably buttery, rich, and smooth, with specks of real vanilla throughout.
Here's my favorite way to use G&B: heat up a cup and a half of whole milk to scalding hot (microwaving it works fine). Break up one bar of G&B white chocolate into small pieces. Whisk the pieces into the milk until smooth, then pour into two small mugs or glasses and serve. You could also add a shot of flavor syrup, a couple drops of natural almond extract, or a bit of liqueur to the drink for variety.

This bar is an excellent example of what white chocolate can be. The ultra creamy texture, infusion of ground vanilla, and the high quality organic products from Green and Black’s all conspire to create a delicious, dessert like bar.
As someone who tempers chocolate in my microwave every couple of days, I found this bar incredibly easy to work with.
A simple way of tempering in your microwave is:
Cut off 1/4 of the bar and divide that quarter into two equal portions, 1/8th each.
Chop up the larger 3/4 of the bar and put into a Pyrex one cup measure.
Nuke on high for 30 seconds.
Stir.
If melted, remove from microwave.
If not, nuke in additional 10 second intervals, being very careful not to burn the chocolate. Caveat: sometimes the chocolate looks as if it hasn’t melted, but once you put a teaspoon into it and start to stir you see that it actually has. The residual warmth of the Pyrex glass will continue to melt the chocolate as you stir it.
Add one of the 1/8th portions of chocolate that remain and stir until completely amalgamated and dissolved.
Do the same with the last 1/8th portion of chocolate.
No, you can add anything you like.
Here are some ideas:
Pulverized freeze dried fruit like strawberries, raspberries or pineapple.
Brown rice crispies.
Roasted nuts.
Various spices, like nutmeg or cinnamon.

Store it in the fridge in a covered container. The cold will only make the chocolate crisper and more delicious.
